May 2012- Vietnam as a country holds a special status in my book. When an opportunity to visit presents itself, I ask no questions before jumping on a flight over. The people are friendly, and the food is delicious. While I won’t comment on the larger impact of French colonialism, there is no doubt that something special and magical happens when you combine French and Vietnamese culinary sensibilities and flavors.

It always pains me to have to hold off on partaking in the amazing street food options until my work is done. The colors, smells, and vibe of Hanoi are ones that come back to me constantly. If I close my eyes, I can almost feel the little stool I am sitting on, as I smell and listen to the sizzling of street meat, while I take a mouthful of street noodles…
